The Physics of Nutrition

When one thinks of mathematics, medicine or pharmacology it congers ideas connected with these disciplines such as, differential equations, cell biology, statistical analysis, equivocation inputs, pharmacodynamics of sampling or occurrence variances.  These terms may seem intimidating and distant to most of us.  However, you need to be informed that the science of human nutrition can be just as intimidating and stoic.  The math and mental acrobats required to figure the weight withstanding of the footprint of a 110 ton office complex can be equally as complex as calculating the epidemiological nutritional patterns of certain groups in a population. The complexity of knowing how the body utilizes, metabolizes and assimilate macro and micronutrients is not an exact science and neither is medicine even at it’s most complex arenas, i.e. neurosurgery or transplant surgery.  Human nutrition governs the health of individuals and populations. If we abort the foundational laws and scientific principles given to us from Mother Nature that define optimal, preventative, recuperative and flawless health, we will be diseased, ill, feeble and leaning like the Tower Pisa, or collapse like the Tacoma Narrows Bridge.

Our health and wellbeing is not founded in the distant stars or planets.  The health and wellbeing of mankind can be established on the laws and calculations set forth by the earth we stand on.  It supplies us the air we breath, the trees and plants that provide us the food to eat, as well as the oceans, rivers and lakes that supply us with life-giving H2O.  Our sustenance is dependent on these innocuous things that we take for granted. If we sway too far from these essential prerequisites to life, we will pay the price.

Deficiencies are Mathematical Calculations

It is factual that if you are not consuming enough of Vitamin C (RDA is 150mg/d is the calculated amount for disease prevention)  you will experience scurvy and die if it is prolonged. Scurvy’s clinical manifestations are bleeding gums, hemorrhage and anemia, neuropathy  and lethargy, swelling and tenderness, as well as the absence of wound healing and infections. The etiology is due to the unavailability of Ascorbic Acid (AA) to form collagen, which is a subscript of connective tissue production.  Connective tissue is the groundwork for blood, areolar, adipose, fibrous, osseous and hyaline tissues and are global throughout the body.  Risk factors stem from the fact that humans can not manufacture ascorbic acid endogenously.  We have to get it from the food we eat.  This classifies AA as “essential”…meaning we have to get it from our diet, otherwise we will die!   Thus, the mathematical calculation of AA to prevent human disease and illness is 150mg per 24 hours period.

Disease is a Biometric Measure 

The profundity in defining “disease” and or “health” is relative to social constructs such as culture, class, income or race.  The consensus does not vacillate, though. Visit a hospital, a prison, a psychiatric ward (that is, if you can find one), a clinic, an American courthouse, our modern grocery stores, as well as the celebration of holidays, and you can feast your eyes on the illusions of health.  But make no mistake, there is widespread misery and suffering in these societal domains.  This suffering is a form of disease and it can be measured utilizing the best and most sophisticated scientific methodologies. The roots of this suffering is dietary and nutritional. Taking a conventional or mainstream approach to ameliorating the suffering versus a holistic or natural approach is where the problem lies!  We are using the wrong measures and asking the wrong questions.  This is why our disease state continues to worsen, not improve, ie., hypertension, diabetes, the opioid crisis. We have moved away from the principles and calculations set out by nature…which is real food.

Nutrition Science should be the first-line tx for Diseases

Most diseases are simple nutritional deficiencies.  This is a fact.  The research and documentation of medicine’s colloquy is unambiguous and unmistakable, both historic and contemporary.  Take hypertension as a disease, for instance. Get the most out of protein by eating it with fats!

As I have said, and will continue saying, protein and fats are essential and the foundational structure of all living organisms. Carbohydrates are not important to health. Whole foods such as eggs, beef, pork, lamb, sheep, seafood, fish, nuts and seeds, provide portions of fat with protein. As a result, our bodies require fats and protein to be eaten together to optimize the effects of both for total and complete health.

Here are 10 evidenced based and scientifically backed benefits of the mighty protein according to Kris Gunnars BSc. of

  1. Reduces appetite and hunger
  2. Increases muscle mass and strength
  3. Helps in the formation of bone
  4. Reduces late night cravings
  5. Increases metabolism and fat oxidation

Protein doesn’t posses these attributes simply by being protein… protein requires fats and oils to behave in the way that it does.

Dr. Lebedow demonstrated that if a starving dog was given fat or protein alone the dog would continue to starve and ultimately die. However, if given, simultaneously, a protein that was a sulfur-containing amino acid (such as, methionine and cysteine) and an EFA-oil, the starving dog would rebound with vibrant life. Sulphur-containing amino acids are reused for the formation of body proteins needed for growth, tissue maintenance and enzyme production. Essential fatty acid oils can not be manufactured by the body so have to be supplied by the diet.

Dr. Rosenfeld showed that a diet high in protein and low in carbs, or one that was high in protein and high in carbs, would both cause obesity. However, once he added an EFA to either diet it resulted in less obesity and improved food utilization and energy production.

The biochemical and cellular rationale as to why fats and oils are so valuable and effective to our health are as follows:

  1. Fats digest over 5-8 hours whereas carbs and protein are digested more quickly, say 2-4 hours
  2. Essential Fatty Acids (EFA) increase metabolic rate and help mobilize and burn saturated fatty acids
  3. Our body loses its cravings for food when its need for EFAs is satisfied. Eating sufficient amounts of EFAs will help you feel fuller faster.

The famous Atkins and Zone Diets are traditionally high protein and low fat diets. The challenge was that people were plateauing before their weight loss goals, after a month or so, and could not lose more weight. Research from Dr. Mary Enig and Sally Fallon from The Weston A. Price Foundation, shows that switching your metabolism from glycolysis to ketosis is one of the healthiest ways to lose weight and boost healthy clinical markers that prevent diabetes, cancer and thyroid problems. Also, protein breaks down as amino acids. Amino acids break down as glucose to be used by the cell’s mitochondria for ATP production as an energy substrate. If you are consuming too much protein this begets serum hyperglycemia, yielding excess glucose and subsequently fat storage or refractory weight gain. Consuming fats and oils (except trans-fats and hydrogenated oils) with quality protein will trigger lipolysis of dietary and stored body fat – this is nutritional ketosis.

Calories…count them for your Car not Your Body!

Calories are a measure of energy composed in the food we eat, but I challenge anyone to show me one. They are calculated from sophisticated mechanical instruments and the premise is that if you consume a calorie it requires a certain amount of energy to burn it off. Hence, “a calorie in is a calorie out and energy in is energy out” is the current mantra. It is based on the Second Law of Thermodynamics and is disconnected to how our bodies use the food we eat. Calories are excellent for measuring how machines use energy but horrible at how our bodies use food.

One hundred calories of potato chips, one hundred calories of prime steak, one hundred calories of Romaine lettuce and one hundred calories of ice cream are different and will be metabolized differently…this is a fact! A calorie is not a calorie to our complex bodies. Protein, fat and starch calories are different and our bodies will use them differently. It is all about Quality not Quantity when it comes to health. If you consume junk you will become junk; mental and elemental.

Practice In Futility

If you are trying to lose weight do not count calories for this is a Practice in Futility. It is all about the quality of the food you are eating. If you are eating foods that are nutrient-dense and packed with good fats you will be on your way to weight loss and it does not matter how many calories you are consuming.

Eighty Percent Full

Do not eat at the dinner table, as well, until you are completely full. This is foolish for anyone trying to lose weight (usually counting calories). You should eat until you are about 80% full then walk away from the food. I hope I am speaking to a fairly intelligent audience…so you know when you’ve over-done it.

Enzymes With your Meals

Take digestive enzymes with your meals. I can not begin to list the benefits of taking an enzyme with your meals. For instinct, protein has to be unraveled from its quaternary configuration in phase-one gastric digestion with hydrochloric acid, then cleaved in the middle and ends to be broken down into animo acids in phase-two duodenal digestion with trypsin and chymotrypsin. This allows for maximum absorption of the nutrients from the food you are eating; giving your body the stuff it needs to function at it best! In this vein, as well, do not drink a lot of fluids, of any kind, when you are eating a mixed meal. You are diluting your digestive enzymes rendering them ineffective.

Exoneration of Saturated Fats, Coconut Oil and Butter

When I consult with customers my first question to them is “What are your goals?”…is it weight lose, is it improved strength and longevity or maybe more muscle mass? These goals drive my counsel. When research is done that guides the dietary practices of a nation the goals of the researchers should be to improve health maintenance and disease prevention. It should be indisputable, stand the test of time and have real world applicability. Saturated fats have, for more than a half century, been the epic antagonist of heart health in this country lead by researchers, academics, doctors and government officials who, through ignorance or a desire to line their pockets, have named fats the villain in our diets.

We are told that saturated fats are the villain when it comes to heart health and are to be avoided as much as possible. Foods like eggs, butter, coconut oil, lard, whole milk and animal meats should to be minimally consumed as to prevent cholesterol provision that would cause your LDL to rise resulting in subsequent risk of heart attacks and stroke. This is the infamous “Diet-Heart-Hypothesis.” This has never been substantiated nor proven and when one digs deeper into the subject they will be amazed to learn that saturated fats are actually very healthy and their utilization does not result in heart disease!

I am here to tell you that consuming saturated fats should not be feared and should be placed on the top shelf as a superior food to consume everyday. I consume them with other EFA’s, MCT, oils, dairy, eggs (4/d everyday!!) and my lipid panel and cholesterol profile always come back with excellent results.

Leg Rhythm comes from Egg Wisdom

Wow! Said to be the most complete food on the Planet. I venture to say it is, incontestably, the most perfect food humans have been devouring since the dawn of time. It has not faltered yet in its provision of vibrant and lustrous life to all that consumes it. It is a super-source food that blesses us with 70 hardy calories, 6 gms of protein (full spectrum 20 amino acids), 0.6 gms of carbohydrates and 222.2 gms of very, very valuable lipids! It is “incredible”, yet at the same time controversial. It’s been credited with giving us extraordinary strength and stamina, yet debilitating us with heart disease from high cholesterol. I am talking about the amazing and fabulous egg.

Vince and Ron touted the egg as the best thing to eat if you were trying to make gains in strength and muscle mass. However, if we did not eat enough protein (amino acids) this would disrupt the nitrogen balance and cause catabolism or muscle wasting. I encourage you to consume at least a dozen eggs per week to stay optimally and supremely healthy, so swap out a carb and replace with an egg. Learn to cook your eggs in the most palatable way to increase compliance. Never overcook your eggs (heat denatures protein). Use unrefined salt on your eggs. Eat range-fed eggs. EAT THE WHOLE DAMN THING – never throw out the yoke. Fat and protein should be eaten together. Carbs and fiber should be eaten together. Try not to mix protein and carbs, i.e., bread and meat. Remember, an egg has to grow into a full chick with all the systems intact. For instance, it needs everything necessary to create the nervous, digestive and immune systems. Our Food Environment and Deficiency Injuries

I am a staunch bibliophile and have been collecting books since I was about fifteen years old. I was exposed to the love of books by my nephew’s (Mik’al) uncle, Dwayne. He told me that if I ever come across a free book, take it. He taught me the value of knowledge and how you can learn about anything in the world just by reading about in it. This quietly resonated in my soul and I took to the hobby of reading any and everything!

I frequent John King Bookstore here in Detroit and it boasts of having over a million used books in stock. I have to tell you, if you are a book-lover you have to visit this place — it is breathtaking! I do not own a million books but I am a proud owner of an eclectic collection of about 2000 books (and growing). It spans subjects from economics and religion to nutrition and medicine.

Now, I have in my possession a classic book entitled “Nutrition and Physical Degeneration” by Weston A. Price (search The Weston A. Price Foundation). This tour de force of truth and scientific authority is a treatise on the subject of indigenous, isolated and aboriginal culture’s experiences when exposed to the European (Civilized Diet). It details the evolution of these culture’s descent into chronic disease, infirmity and suffering due to their diet change. It tabulates an exhaustive record of photos and scholarly literature that stretches from Northern Europe (Switzerland) to South America (Peru). It demonstrates their adoption of the diet and their inability to adapt to the diet and as a result developed numerous diseases, illnesses and early death. The effects of the diet caused systemic suffering that became intergenerational with noticeable changes in their physicality (phenotype) and genetics (genotype).

Ron told me 35 years ago the stories of the Buffalo People (America) and the Masai Tribes (Africa) and how their way of life of thousands of years was forever changed due to their contact with Western man.

The correlations between what these wonderful people experienced in health and culture corruption, and what I observed everyday-Americans experiencing in widespread health decay, was ominous and powerful!

It was obvious that the “food environment” was the cause of these ravenous and ubiquitous diseases (injuries). The associations were stark. However, the treatments are fairly straightforward. As depicted in the book and my own conclusion…we need to gather our collective will and focus on the health and wellbeing of ourselves and listen to Mother Nature. This is the sure way back to optimal health and vibrancy.

Mother Nature/Earth has provided us with the food we need. Eat food that is as close to its origins from Earth as possible. When we are ill from the common cold or have a headache, remember, this is a signal we are deficient in nutriens. Our bodies are not deficient of Tylenol. Prevent disease both Mental and Elemental by eating what has been here for millions of years and is Mother’s provisions.

Postulation to Addiction

When I experienced the epiphany of the true dangers and horrible effects that sugar and carbs had on the human body, I was on a mission to discover the root causes of why people became addicted to them. It lead me down a rabbit hole that exposed me to the nature of the food and medical industries. I learned over time what they were willing to go though to hide the truth and protect their bottom line when it came to food and health. Their combined influence is worth trillions and they have been given the responsibility of advisors, educators, lawmakers and arbitrators to guide us on the proper path to health. This influence alloted them complete control of our “food environment”. And, I mean every bit of what we see and hear about food and health is dominated by these industries. Trying to escape their influence is an exercise in futility. Their impact reaches far and wide.

Their influence has rendered people oblivious to their affect on how we think of food. People have to realize that what they are experiencing with respect to illness, disease and debility are rooted in three actions: 1. consumption of too many carbs 2. eating “food” that simply is not “food”(Fritos), and 3. merely overeating. All three actions can be linked to how these industries control our understanding of what we eat. Their control is directly linked to our ignorance. If your cardiologist and dietician tells you to take statins for high cholesterol and eat a low-fat diet, you are not going to challenge their wisdom. If this advise causes you more disease and ailments then no one should logically hold you accountable for your obesity or your diabetes or PCOS or your hypothyroidism…right? You are not fully responsible for your awful health if you are not given the proper information in order to maintain optimal health! Yes…the obese, the hypertensives, the diabetics, the COPDers and asthmatics, the hypothyroid and dialysis patients are truly not liable for their syndromes if the authorities and healthcare professionals advising them fed them erroneously misinformation about how to avert disease!

This leads me to the salient point of this article, the postulation of addiction and how one becomes addicted to carbs; over-consume food and ultimately collapse into chronic and persistent disease. Read and ponder:

(HANGRY) means you are Withdrawing from Carb Addiction!

We have all heard of the term “Hangry” which is a portmanteau for being in a state of hunger and angry, simultaneously.   It is a confluence of symptoms that will start innocuously with abdominal growling and stomach pangs (borborygmus), gas and indigestion, and ultimately leads to full blown mental irritation, agitation and a bad temper.  The comical (Snickers) commercials demonstrate people’s personalities changing because they are craving this food (typically carbs).  Of course, the second they consume this food they return to their normal selves.  The term and the commercial is now a mainstay in the American experience because it is so relatable to virtually everyone that consumes the standard American diet (SAD).  It is so relatable to most Americans because the “SAD” diet is the most pervasive food environment that we are exposed to.  And, we have been told by every authority in the health and food industries that if we follow their recommendations on what to consume – and how to exercise- that we will be healthy and live long lives.  This could not be furthest from the truth.  Hanger is the result of chronic overexposure to carbohydrates and when the body is devoid of them for too long, withdrawal ensues.  This process can best be treated with fats and oils and placing oneself into nutritional ketosis where the body is no longer in glycolysis.

It is my opinion from 20 years of reading and studying nutrition and medical science that the connection between being in a state of “hangry” and in a state of poor health is inextricably linked.  Hanger or hangry is a clinical state of substance withdrawal and the substance you are withdrawing from is a carbohydrate.  The net carbohydrates  that are most responsible for this addiction biochemistry would be the simple saccharides like fructose, glucose (aka dextrose) and sucrose – albeit, interchangeably.  If people would understand that they were not directly responsible for their hanger, obesity, hypertension, their vascular diseases, their cancer and degenerative syndromes, they would rejoice that there is hope in ameliorating and healing their  sicknesses, illnesses and all the symptoms they bear.  Growling stomach is a symptom of severe sugar withdrawal and we should not mistaken it as something that is normal because sugar addiction and sugar withdrawal is not something that should ever be taken lightly!

We have been inundated with the idea that the carbohydrate is a necessary macronutrient; that, it is just as important for complete and full healthiness as its cousins, protein and fat.  As mentioned before in my articles, there is no such thing as an “essential” carbohydrate; meaning human life does not depend on it for sustenance. We will not parish if we ceased consuming it.  Hence, we can live healthy and full lives without consuming one bit of a carbohydrate.  So, why are we told to eat the stuff by experts and government leaders?  Naturopathy and  Orthomolecular Science has proven that nutritional ketosis is one of the best treatment modalities for supreme health and disease prevention, yet we allow the food corporations,  politicians, healthcare (sickcare) industry and pharmaceutical giants to advise us and guide our food and healthcare policy. They tell us to consume carbohydrates because it is a necessary macronutrient.  The tenets of naturopathy and nutrition science should guide our food and health directives, not pharmaceutical giants and food multinationals…Period!

Carbohydrates are the only macro-food that cause addiction and subsequent withdrawal if eaten in saturation.  I have read 10’s of articles on the phenomenon of “hanger” and not one relate it to sugar-addiction-withdrawal.  They say it is real, they describe it as a “phenomenon”, some even go into this elaborate neuro-biological-emotional-axis in explaining its origins.  I have yet to read one that explains it for what it truly is…the first sign of sugar withdrawal!

As a nurse for more than two decades and working in the ICU and critical care, I have witnessed patients going through severe withdrawal from alcohol to opioids. It is a brutal site and withdrawal can be deadly at this level. I am not referring to this level of withdrawal.  But we need to recognize that a growling stomach is neither healthy or normal. If this approach was taken then we would normally ask: what are we addicted to and how should we treat it?

I eluded to the treatment earlier and that is “nutritional ketosis”.  Vince Gironda and Ron Kosloff have been preaching about fats and proteins being the principle foods for superior health and strength for forty years.  Now it is the internet sensation…ketosis, ketones, nutritional ketosis, ketogenesis.  There are over a couple hundred thousand searches for it each month on Google (Paleo Mag. Special Edition: keto, the definitive guide).  Alone with all the incredible benefits of going super low carb, putting the body’s metabolism in nutritional ketosis is the healthiest metabolic pathway one can attain.  The biggest hurdle I have come across is getting people to come to grips with the fact that they will have to dramatically cut back on their sugar intake.  They know almost unconsciously and instinctively that they do not want to give-up their sugars and starches.  They fight it the second I start the conversation about cutting back the carbs…there is a brick wall!!  This is a tell-tale sign they are addicted.  Try telling someone to cut their carbs down to 50 gms/d when they are addicted, they will walk out on you.  Essential fatty acids, MCT’s, eggs, fasting, lots of fresh vegetables, supplementation and resistance exercise are just a few of the modalities I strongly recommend to starting ketogenesis and getting the carb-age out of your system.
